Normally, I’m not the type of person to jump on TikTok viral recipes and “trends” but the viral recipes on TikTok are seriously good. When I saw these crispy parmesan potatoes, I was like “oh, 100%.” I actually made them for Thanksgiving and they were such a hit that I knew I had to post a recipe for it.
These crispy parmesan potatoes are for those who love extra crispy edges on everything – brownies, burnt ends, crispy cheese that oozes out of grilled cheese sandwiches, the list goes on. You will get that with this dish and it is SO SATISFYING. Literally the entire bottom of the potato is one giant lacy, crispy edge. The butter and parmesan cheese on the bottom of the pan get extra crispy (but not burned) and browned and it’s seriously an edge lover’s DREAM.

- Grated parmesan cheese
- Butter
- Garlic powder
What kind of potatoes are best for roasting? I prefer to use russet potatoes or yellow potatoes for roasting. Here is a guide to the best potatoes for roasting.
How to Make Crispy Parmesan Potatoes
Set oven. Preheat oven to 400 degrees Fahrenheit.
Prep potatoes. Wash the exterior of the potato well (unless you’re peeling it) then cut into quarters.
Prepare the baking pan. To the 9×13″ baking pan, add the melted butter and spread it around until it is evenly coating the bottom of the pan. Sprinkle grated parmesan cheese evenly on top of the butter then the garlic powder.
Add the potatoes. Line up the potatoes in an even layer on top of the butter and cheese layer. Sprinkle salt and pepper on top.
Bake. Bake in the middle rack for 20 minutes then move to the top rack for the remaining 10 minutes.
Cool. Remove from oven and let cool for about 10 minutes before trying to remove the potatoes. This gives it time to set up and “stick” to the potatoes without it coming off when lifting the potatoes.
Common Questions
My cheese and butter burned, what did I do wrong? First, make sure your actual oven temperature doesn’t run hot and the best way to ensure this is to get an oven thermometer. Second, if you’re using a dark baking pan, this could be why. You may want to switch to a glass baking pan. Third, make sure you have it in the middle rack first. If you’re baking it on the top rack the entire time, that is likely why it burned too.
Can I substitute with another cheese? You may. Freshly grated cheese like cheddar and parmesan work best in this, however, I haven’t tried any other cheeses and can’t speak to their success rate.
My potatoes are still hard. It depends on what kind of potatoes you used. If you’re using the larger potatoes and cutting them yourself into quarters, they tend to cook faster because the shape is smaller. If you’re using the baby potatoes and just cutting them in half, they will cook a little longer because it is thicker. I would adjust cooking time based on your potato size and thickness.

- ¼ cup (57 g) butter, melted
- ½ cup (50 g) grated parmesan cheese
