When I was about, oh 12 years old maybe, my dad gifted my mom a brand new cherry wood vanity table. It was pretty darn expensive from some furniture store that has since closed. I decided, as the independent 12-year old that I was, that it would be a BRILLIANT idea to paint my nails on her brand new vanity table because I mean, where else could I have done this? I ended up spilling nail polish remover on it and proceeded to WIPE it with a towel, not knowing that acetone basically strips all the wood finish and paint. Oh my god. You can only imagine how much trouble I was in. Haha, to this day, my parents still have that vanity table with that ‘love mark’ on it. Just a constant friendly reminder of where a 12 year old should not paint her nails. Also, my parents banned me from using nail polish for a year. I had to sneak over to my girlfriends’ houses to use their nail polish, haha

You would think I’d learn my lesson from that incident. Nope.

Last week, after we had gotten home from our anniversary dinner, I decided to soak off my gel polish on our EXPENSIVE Ethan Allen dining room table. Like this was the dining room table where we were debating whether or not to buy. Anyway, so I did lay down a placemat over my work area and damnit acetone, it just had to drip a little bit on the placemat and seep through to the wood table. It like literally made indentions and stripped a bit of the finish off. It’s actually NOT as horrible as what I did to my parent’s vanity table but it’s still somewhat noticeable. Jason was like, ‘omg you are single-handedly destroying this dining room table and you’re nervous about a potential PUPPY gnawing on it.’ Haha, touché.

As you can imagine, this is one epic breakfast grilled cheese sandwich. I buy fresh chorizo sausage from Whole Foods all.the.time. and I take them out of the casings and press them flat into a freezer Ziploc bag and freeze them for later. I was sitting on the couch one evening and I was like, I’m totally craving a chorizo grilled cheese sandwich. Totally random but I had to do it.

The next day, I was like omg, I could make the world’s most epic breakfast grilled cheese sandwich. And I did. Tater tots, chorizo, and cheese all in this glorious sandwich. Get itttt!

Epic Breakfast Grilled Cheese Sandwich

Everything you want on a breakfast platter but in a sandwich form. Your breakfast has never looked this epic!

Cook Time: 20 minutes
Total Time: 40 minutes
Servings: 2

Ingredients 

  • 12 frozen tater tots
  • ½ pound (227 g) fresh chorizo sausage, casing removed
  • 2 tablespoons (28 g) butter, room temperature
  • 4 slices of bread
  • 1 cup (132 g) freshly grated colby jack cheese

Instructions 

  • Bake frozen tater tots according to the instructions on the package. Once done, smash tater tots with the back of a wooden spoon. Let cool.

  • In the meantime, brown chorizo in a small skillet and break it apart into pieces with a wooden spoon or spatula. Drain and put in bowl, set aside.
    1/2 pound (227 g) fresh chorizo sausage
  • To assemble sandwich, butter one side of each bread. Place butter side down on the cutting board and sprinkle 1/2 cup of shredded cheese in an even layer on top of bread. Place 6 smashed tater tots on top of the cheese in 2 rows then sprinkle half the chorizo sausage on top. Place the other slice of bread, with the butter side facing up, on top of the chorizo layer. Gently press down.
    4 slices of bread, 1 cup (132 g) freshly grated colby jack cheese, 2 tablespoons (28 g) butter
  • Heat skillet to medium heat and place sandwich in the skillet. Cook until cheese is melted and both sides are browned, about 5-7 minutes total. Repeat with the other sandwich.

    OMG- that is horrifying Julie! If it makes you feel better, we saw last year that Pia had scratched “Olympia” in our 200 year old antique side board with a paperclip end :) Sandwich looks epic.
