

I heart you x’s three!


We’re almost a week away from Valentine’s day so I thought it’s now time to start whoring out the Valentine’s treats.
I’ve never been a fan of Valentine’s day. Not cause I didn’t have a Valentine in years past and I’m jaded or anything. To me, I just think it’s a dumb Hallmark holiday. Why do you have to have a day to show the person you love that you love them? Shouldn’t that be every day? I guess I’m not like most girls when it comes to Valentine’s day. Lucky for J I guess. I never expect a huge celebration. The most I ever expect is that he acknowledges it through a card but I don’t expect to be showered in gifts, flowers, dinner, etc.
However, I do embrace the holiday through eating my way through it, just like most holidays.
I had been meaning to make rice krispy treats for some time now and I used to make them all the time because of how easy they were but I think that’s what got me sick of them. Anyway, so I was thinking of treats to make for Valentine’s day and I thought how cute would it be to make heart shaped rice krispy treats and then dip them in dark chocolate?? Uh, best idea ever. They taste so good. The leftover rice krispies that weren’t enough to form a heart, I gobbled them down. I’d like to think that they’re healthy too. Marshmallows and rice krispy cereal. What is unhealthy about that?
You should make these really simple treats and send them off to school with your kids or bring them to the office! They’ll love you just like you heart them :)
I Heart You Rice Krispy Treats
Yield: Approx. 14 hearts
Ingredients:
3 tbsp. unsalted butter
1 bag of large marshmallows
6 cups rice krispy cereal
1 bag of dark chocolate chips
4 oz. white chocolate chips
Cooking spray
Instructions:
- Prepare a 9 x 13 baking dish by spraying it with cooking spray. Set aside. Also prepare a baking sheet lined with parchment paper or silicone baking mats. Set aside.
- In a large stockpot, melt 3 tbsp. of butter on medium high heat then add in the bag of marshmallows. Stir the marshmallows until they all melt. You must keep stirring to avoid burning the marshmallows.
- As soon as the marshmallows are all melted, remove from heat and pour in the rice krispies. Mix it all together until all the rice krispies are coated in marshmallow.
- Pour the mixture into the baking dish then spray your hands with cooking spray. Using your hands, press down the rice krispies in the baking pan.
- Using a heart shaped cookie cutter, press it into the rice krispy to cut out the heart shapes then place them on the prepared baking sheet. Keep doing so until you run out of space, then reform the rice krispies and continue to cut out until you can’t anymore.
- Let the rice krispies rest for 15 minutes to harden up. In the meantime, over a double boiler, melt your dark chocolate and white chocolate in 2 separate shallow bowls.
- When ready, take a heart and dip the bottom side of it into the dark chocolate then lay down the non-chocolate dipped side on the parchment paper. Continue until all hearts have been dipped in chocolate.
- Pop the baking sheet in the refrigerator for 10 minutes to let the chocolate harden. When ready, flip the hearts over and drizzle white chocolate on the non-chocolate dipped side with a fork and sprinkle the sprinkles on top.
- Store in an airtight container.

My hubby would love me if I made these, he’s a rice crispy treat FIEND! It’s like the one thing he never grew out of. And what’s funny about it, is that I (who like everything else under the sun) am not really a rice crispy treat fan. There’s just so many other desserts out there I’d rather eat first. So point being, I never make these but he would be totally surprised and extra excited if I did this year ;)

These are so cute! My mom and I used to make rice crispy treats when I was younger, and they always take me back to my childhood. Mmm the chocolate chips seems like an excellent touch though!

Just wondering if these would stay soft/chewy if I made the (in Rhode Island) and mailed them in a Valentines gift package to my 5 yr. old grandson (in Houston)? Usually a 3 day travel by mail trip..Any packing suggestions?

I think they would still be soft & chewy if you packaged them in an airtight container and shipped them immediately after you made them. You could also wrap them individually in plastic wrap too.
