Peach Parfaits

It’s weird and sad that the Olympics are over. I can’t believe how fast two weeks goes. Now we have to wait another 2 years for another Olympics to get excited about. I must admit, though, that I never really got the chance to sit down and watch a lot of the competitions, however, last night, I was able to and they just so happened to be interview Ryan Lochte. Uh, is he even real? Seriously. I can’t get over how hot he is. I know every girl & their mother has obsessed over him the past two weeks but now it’s my turn. The interviewer asked him about relationships (ya know, since his mom said Ryan was a one-night stand kinda guy) and whether or not he’s been burned by a girl and whether or not he wants to settle down anytime soon. He said he had been burned by a few girls (I bet those girls are regretting that now, ha!) and that he does want to get married soon and settle down.

Ryan, if you’re reading this, I think you’re a hottie & I make killer food (ya know, to feed that Olympian body of yours) so I’d love to be your wife.

Oh stop it. Of course I’m kidding. He’s just eye candy and Jason understands!

So now that the Olympics are over, what do you plan on doing with your time? Or do you know what to do with yourself now that you aren’t glued to the tv? :)

I made these parfaits last week because I still somehow have not consumed all the peaches in my fridge. I thought this would be a nice healthy alternative to snacking and this makes for a pretty filling breakfast! It’ll take you 3 simple ingredients and less than 5 minutes to have this delicious and refreshing parfait. Mix it up with various seasonal fruits too!

Yield: 2 peach parfaits | Prep Time: 5 minutes | Cook Time: N/A

Ingredients:

2 6 oz. containers of vanilla Chobani Greek yogurt

1 large peach, diced

1 cup granola (I used Bob’s Red Mill honey oat granola)

Instructions:

  1. Using a spoon, layer bottom of the trifle glass with a few spoonfuls of yogurt.
  2. Then layer on some diced peaches.
  3. Then granola.
  4. Then top with more yogurt.
  5. Repeat until desired amount of layers or until the trifle glasses are full.
  6. Eat immediately. They don’t keep well as the granola will get soggy.

Jen @ Savory Simple - August 13, 2012 - 8:22 AM

Totally the perfect breakfast!

amy @ fearless homemaker - August 13, 2012 - 9:36 AM

What a fab use of the season’s fresh peaches! i’m not sure what the heck i’m going to do now that the Olympics are over – the husband + I have been watching at least some of it every night. I guess this means we’ll have to get up + actually start doing stuff again. NOOOOO! ;-)

Mercedes - August 13, 2012 - 9:46 AM

I feel the same way about the Olympics being over! At least it’s Shark Week now, so that can tide us over for another week! These parfaits look so refreshing! I wish peaches were good all year!

Jessica@AKitchenAddiction - August 13, 2012 - 9:57 AM

I love parfaits with fresh fruit! This would make a great breakfast!

Megan {Country Cleaver} - August 13, 2012 - 10:22 AM

Ohhh Ryan Lochte, you hottie with a naughty body. I wish I could have watched more of the Olympics, there was so much I missed! Including that nice piece of…yeah, I’ll stop here. haha
These are perfect parfaits for any Olympian, or those of us who wish we were…

claire @ the realistic nutritionist - August 13, 2012 - 10:26 AM

yeah ryan is sexy as shizzzzz. LOVE THESE PARFAITS!

Cassie - August 13, 2012 - 10:44 AM

These are adorable! I love Chobani and BRM! These are a winner!

Ashlae - August 13, 2012 - 10:50 AM

Ahh, that Ryan Lochte! I’m more into tall, skinny, geeky looking guys – but it’s been a hoot watching women drool all over him for the past two weeks. I just can’t get past the grill.. Oh. My. Word.

In other news, I’ve got yogurt, peaches and granola just sitting around, begging to be used. And although the peaches are borderline spoiled (no idea how we let that happen), I’m making me a parfait. Because somehow I’ve lived 24 years without ever trying one.

Julie - August 13, 2012 - 10:53 AM

I completely forgot about the grill! Ugh, that thing needs to be destroyed. As long as he doesn’t wear one, he’s still a hottie in my book ;)

sally @ sallys baking addiction - August 13, 2012 - 11:37 AM

simple & easy – I love recipes like this that I can whip up quickly for an easy breakfast, snack, or even light dinner! Peach Chobani is easily my favorite. or the mango!

Jackie @ Domestic Fits - August 13, 2012 - 11:44 AM

Those swimmers are pretty tasty. Almost as tasty as these peach parfaits.

Stephanie - August 13, 2012 - 11:44 AM

You’re hilarious. hehe Love how easy these are to put together!

Kelli @ The Corner Kitchen - August 13, 2012 - 12:04 PM

Just bought a giant basket of peaches at the farmers market this weekend. Parfaits for breakfast tomorrow!

Stephanie @ Eat. Drink. Love. - August 13, 2012 - 12:06 PM

Ryan Lochte is pretty hot! I’m sad they are over too!

These parfaits look so good! I am on a real peach kick lately!

shelly (cookies and cups) - August 13, 2012 - 12:16 PM

Back off Ryan! He’s mine!
But I might trade you him for a parfait…I know he’ll understand!

fabiola@notjustbaked - August 13, 2012 - 12:21 PM

This is perfect for a mid week dessert. I have nectarines everywhere so I’ll have to try it with some. I am a fan of Ryan, super HOT!

I SO sad the Olympics are over! But I guess that means I’ll have a bit more free time (or at least time that isn’t spent on the couch in front of the tv!)

These parfaits look good! My usual breakfast is yogurt + granola + berries, but I think I might need to try it with peaches before they are out of season!

Carla @ Carlas Confections - August 13, 2012 - 2:06 PM

Wow. I am amazed by these pictures Julie. They are so beautiful! And those parfait cups are so cute! I love it. Youll definitely have to make some of these when you come in September as well, so we can keep *some* health along with our bad food splurges ;) Cant wait for it!!!

Erin @ Texanerin Baking - August 13, 2012 - 2:35 PM

Haha. Love the marriage offer. I only watched gymnastics but I watch every gymnastics competition ever, so it’s not that bad for me. :)

I love these pictures! And how simple the parfaits are. So summery.

Jennifer @ Mother Thyme - August 13, 2012 - 2:55 PM

I’ve seen this all over Pinterest today! :) Beautiful, beautiful, beautiful!

Erin @ Dinners, Dishes and Desserts - August 13, 2012 - 4:53 PM

I always just put strawberries in parfaits, but peaches are a great idea. Love fresh peaches, they are still all over the place here!

Baking Serendipity - August 13, 2012 - 9:52 PM

I’m missing the Olympics too! They were always on in the evening, even if it was just for background noise. Love these parfaits! I can’t get enough peaches before this summer is over :)

amanda @ fake ginger - August 13, 2012 - 11:37 PM

ooh, I’m totally making these for my kids’ breakfast tomorrow morning! I always forget about parfaits! They look awesome!

Chung-Ah | Damn Delicious - August 14, 2012 - 12:47 AM

Julie, you are hilarious! I hope Ryan Lochte sees this post and comments! Wouldn’t that be amazing?

As for this parfaits, yes please! I love how easy they are to make, and I actually have everything on hand!

Mackenzie {SusieFreakingHomemaker} - August 14, 2012 - 9:28 AM

I love peaches. So much. I miss them in the winter and each harvest spice peaches straight from the can… on the couch… usually with slippers… TMI? maybe.

Either way – I made this for breakfast this morning and it rocked my world.

Thanks love!

Really? Lochte? What about Phelps?! Phelps is my husband in waiting. If things head south with the current guy, he’s next up! I’m sure he doesn’t mind being #2, right? lol

Rachel @ Baked by Rachel - August 14, 2012 - 4:03 PM

D Y I N G over here lol. You and all of the other girls who profess their love or maybe lust for someone in a post just kill me. Complete hilarity.

Aimee @ ShugarySweets - August 14, 2012 - 7:37 PM

Oh Yum.
What? Olympics are over? Not according to the 100 plus hours still on my DVR that I haven’t watched, hehe!!

Kathryn - August 14, 2012 - 10:33 PM

I hope Ryan Lochte likes peaches ;)

Julie - August 14, 2012 - 10:52 PM

Bahaha, I didn’t even think about that part. What if he’s allergic?! ;)

Anna @ hiddenponies - August 14, 2012 - 11:55 PM

I love anything peaches, and this would be a perfect start to the day for me! I need to buy peaches one more time before the season’s over :)

Jenny @ BAKE - August 16, 2012 - 10:18 AM
