  • White and yellow canned corn – This recipe uses canned corn in the event that it’s not a season where fresh corn is available. If it’s in-season, definitely opt for fresh corn!
  • Bacon
  • Green chiles
  • Sour cream
  • Shredded cheese – a mixture of Monterey Jack and cheddar cheese gives this dip great flavor!
  • Cream cheese
  • Parmesan cheese
  • Fresh cilantro and/or green onions – as a garnish.

How To Make Corn Dip

Ready to get dipping? We gotta make sure to combine everything first and here is a general overview of the steps involved. Be sure to scroll to the bottom of this post for the full recipe.

Set oven and prepare baking dish. Preheat oven to 350 degrees F and lightly spray a baking dish or deep skillet with cooking spray and set aside.

Combine all the ingredients. In the baking dish or skillet, combine all the ingredients (corn, bacon, green chiles, sour cream, shredded cheeses, cream cheese, and parmesan cheese). Top with additional shredded cheddar cheese.

Bake. Slide it onto the middle rack of the oven and bake for 45 minutes, or until thick and bubbly.

Recipe Tips, Substitutions, and Variations

  • Drain well. Make sure to drain the corn kernels thoroughly before adding them to the dip to avoid excess moisture.
  • Bring ingredients to room temperature. Bringing the cheeses to room temperature help with melting and also incorporating into the dip mixture. If anything, softening the cream cheese before mixing it with the other ingredients to ensure a smooth and creamy texture is probably the most important step.
  • Looking for some heat? Add diced jalapeños and cayenne pepper for an even spicier kick, or make my Jalapeño Corn Dip instead.
  • Switch up the cheeses. Use different types of shredded cheese, such as pepper jack or smoked gouda, to switch up the flavor.
  • Want to go a bit lighter? Use Greek yogurt or light mayonnaise for a lighter and tangier dip.
  • Corny tip. This recipe uses canned corn in the event that it’s not a season where fresh corn is available. If it’s in-season, definitely opt for fresh corn! The bicolor corn would be perfect in this. You can easily make the corn in the Instant Pot while you prep all the other ingredients.

Storage and Reheating Instructions

I’d truly be shocked if you had any leftovers! However, if you do, this dip can last for up to five days in an airtight container in the refrigerator. Make sure to stir it well before serving.

Making ahead of time? Corn dip can be made up to two days in advance and stored in the refrigerator until ready to serve. You can also mix together the dry ingredients (corn, shredded cheese, seasonings) ahead of time and mix in the wet ingredients (cream cheese, mayonnaise) just before serving.

Freezer-friendly? While it is possible to freeze corn dip, it may alter the texture and flavor of the dip. It’s best to enjoy this fresh or refrigerate any leftovers for up to five days.

How to Serve Corn Dip

This incredibly versatile dip can be served in a multitude of ways, making it a truly unique and delicious dip that you’ll want to keep in your recipe arsenal.

Crunch, crunch. Serve corn dip on a platter with tortilla chips, pita chips, crackers, and vegetable sticks for dipping. Arrange the chips and veggies around the dip for an eye-catching presentation.

Corn Dip Recipe

Creamy, cheesy, and bursting with flavor, this dip is a must-try for anyone who loves corn and cheese!

Ingredients 

  • 15 ounce canned yellow corn, drained
  • 15 ounce canned white corn, drained
  • 4 slices bacon, cooked and chopped
  • 8 ounce canned diced green chiles, (usually this is two 4-ounce cans)
  • ½ cup sour cream
  • 1 cup shredded monterey jack cheese
  • 1 ½ cups shredded cheddar cheese, divided
  • 8 ounces cream cheese, cubed
  • ¼ cup parmesan cheese
  • Fresh chopped cilantro and green onions, for topping
  • Tortilla chips or other corn chips, for serving

Instructions 

  • Preheat oven to 350 °F (177 °C). Grease a medium-sized baking dish with nonstick spray.
  • Add corn, bacon, green chiles, sour cream, monterey jack cheese, 1 cup cheddar cheese, cream cheese, and parmesan cheese to the baking dish. Stir to combine. I used a fork to help incorporate the cream cheese into everything else.
  • Top with additional ½ cup cheddar cheese.
  • Bake for 45 minutes, or until thick and bubbly.
  • Top warm dip with chopped cilantro and green onions. Serve warm with tortilla chips.

Notes

You can use 2 cans of yellow corn if you can’t find white corn. However, I like the different colors and sweetness between the two.
To make this vegetarian, you can leave out the bacon.
The parmesan adds saltiness to the dip. However, you can taste and add salt to taste. Keep in mind that the chips you serve it with will also likely be salted.
