PW Wednesday’s: White Chicken Enchiladas


It’s that time again! And this week white chicken enchiladas were chosen. It was very Paula Deen. The amount of cream, cheese, sour cream, and butter that was called for in this recipe was obscene. I felt like my ass was getting bigger and bigger as I ate it. Needless to say, even though this was probably terrible for me, it was still delicious! I have several tweaks to this recipe, as I’ll note below, and so do the other bloggers so be sure to check them out to make sure when you make this, you won’t make the same mistakes as us and you’ll get some time-saving/calorie-saving tips too!

My notes about this recipe:

  • I didn’t roast the peppers, I was in the middle of moving this weekend so I didn’t have the time to roast and peel them. I just diced them and cooked them with the onions.
  • I halved the recipe and it still made plenty.
  • I only used 1/4 cup of cream.
  • If I were to make this again, I’d omit the sour cream.
  • I used way too much cheese. I probably wouldn’t use nearly as much as I did for the topping next time.
  • The dish was flavorful but I feel that it could’ve had more flavor from spices rather than dumping a bunch of cream and sour cream together.

It definitely sounds like a lot of butter and cream! I’m not sure how I would feel about eating all that but they do look absolutely delicious.

Oh boy, yours look insanely creamy! haha I didn’t use the sour cream at all and just put a dollop of greek yogurt instead. I’m thinking that was a good decision. Not that these don’t look amazing, but I’m pretty sure I’d have a stomach ache after half of one! haha :)

I love chicken enchiladas. These look wonderful. Will have to check out the recipe and the modifications. Not sure I have ever had cream with my enchiladas before :)

I made enchiladas the other day and swapped greek yogurt for sour cream. They turned out pretty good, but sometimes the best enchiladas are just sauce, cheese, and tortillas. :)

They look great! I like your tips for cutting down the fat. Sounds like you can still make them creamy with using a lot less of the fattening stuff!

Julie! Even with the modifications to PW’s original recipe, I am still in love with this dish! It looks incredible. So much creamy goodness and so much CHEESE. More spices next time. This might sound gross, but I would top that with salsa lol. I love condiments!

I was a bit behind on my google reader so that’s why I’m getting to this now. I love that you pointed out how your ass was getting bigger as you were eating this. It looks incredibly creamy and cheesy, which is signs of the ultiamte comfort food. And I don’t mind if my ass gets bigger because it’ll be totally worth it when I inhale this.
