Jason’s Mac and Cheese


This past weekend Jason and I had to go back to our old apartment and clean it from top to bottom. Seriously, that apartment cleanup had been the last thing I wanted to do. I felt as if that apartment was an ex that you never wanted to see again or the ex that you just broke up with but have to keep going to see them because you gotta drop off their stuff and vice versa.

Well, thank god we’re done with all that jazz. Keys returned and we never have to hear the elephants living above us again :)


We also went furniture shopping on Saturday. That was fun – sort of. We saw some pieces that we were like OMGZ but then looked at the price tag and slowly walked away, and then there were some pieces we wanted to get but couldn’t see how it’d fit into our style at home since we already have some furniture in place. It’s a tough life, forrealsies.

We had one of our adult moments too. We stood in the design showroom of Ethan Allen and debated on whether or not we should spend $2600 on a dining room set that we were (and still am) IN LOVE with and we went to see it TWICE in one day. But that didn’t last long as we killed off our expensive taste and decided to go for a mediocre dining room set.

Although we didn’t buy anything this weekend, we’re still on the hunt! We also learned that it’s probably a good idea to measure the space your furniture is going to be put in prior to actually going to look at furniture. Ya know, just a thought ;)

Sidenote: if you haven’t seen Snow White & the Huntsmen yet…go see it. I LOVED it!

So now that I have given you a complete run down of my weekend, it leads me to talk about this mac and cheese. As you can see, our weekend was packed, but this mac and cheese is a dish you make when your life becomes a tornado. It takes 20 minutes to make. 20 minutes! You certainly can spare yourself 20 minutes to make this creamy mac and cheese, right? I thought so.

Jason made this mac and cheese almost 2 months ago and sad but true, I’m now finally getting around to posting it. It wasn’t because it wasn’t blog-worthy, if it wasn’t, you wouldn’t be seeing it here now and I wouldn’t have made him make this twice in one week :) It was because I just had to get other posts out first but that doesn’t make this dish any less fantastic. I love that it’s a Jason original :)

Jason’s Mac and Cheese

Yield: 3-4 servings | Prep Time: 5 minutes | Cook Time: 20 minutes

Ingredients:

2 cups macaroni/elbow pasta

1 tbsp. butter

2 tbsp. flour

1 1/2 cups of milk

1/8 tsp. cajun seasoning

Pinch of cayenne pepper

1 3/4 cup of shredded cheese

3/4 cup panko breadcrumbs

Instructions:

  1. Bring a large pot of water to a boil, season it with salt, and add in your pasta. When pasta is done, drain and set aside.
  2. In the meantime, in a small pot on medium heat, melt the butter and whisk in the flour until there are no large clumps. Pour in the milk and continue whisking until mixture has thickened up. Add the cajun seasoning and cayenne pepper.
  3. Pour in the cheese and whisk together until all has melted and is smooth.
  4. Take the cooked pasta and pour it in a small casserole dish. Take the cheese sauce mixture and pour it all over the top of the pasta. Sprinkle panko breadcrumbs on top.
  5. Put casserole dish in broiler on high and cook until panko has browned and cheese is a bit bubbly.
  6. Serve immediately.

Ahhh being an adult is so overrated at times! lol. We’ve had a few of those moments where we realize it isn’t practical to spend $5k on a bed set when we can revamp old pieces of sold wood furniture for $500. This mac & cheese looks fab & of course those little Le Creuset pots are to die for!

a) I love that Jason has a signature mac n’ cheese.
2) I hate being an adult and having to deal with those crazy “pull the trigger” moments – especially when it comes to home stuff like buying a new dining set.

Ugh, sometimes I wish I was just made of money and could afford beautiful pieces of overpriced furniture! Life is hard. :(

Going back to an old place that you’ve just moved out of the do nothing but CLEAN is probably my least favorite thing about moving which says a lot because moving is SUCH a headache, as I’m sure you have had your fill of it!!

Jason is a keeper. This mac n cheese looks like HEAVEN! 20 minutes to cheesy glory.. sign me up. :)

PS if you have any blue painters tape, use that to tape off the size of furniture you’re considering so you can get a good idea of how it’ll fit in a room!

I envy your shopping for new furniture… especially a new dinning room set! I’ve been on the hunt for the “perfect” set for almost a year and have yet to buy anything. I think I need to wait till the kids are a tad older since they just destroy everything I own! As for Jason’s Mac n’ Cheese seriously YUM, and super cute in the mini crocks.

Oh man! I know exactly what you mean about having elephants living above you! I think we live in the oldest apartment complex in the history of man, so the walls are so thin, and we hear everything! Its awful. Not to mention we have college students (aka elephants ;) ) above us! Also, I am IN LOVE with those ramekins! Such perfect colors! I want them! Oh yes, and that Mac n Cheese looks bomb! :)

I can definitely do macaroni in 20 minutes! I love house and furniture shopping…it’s the total dork in me. Cleaning apartments though I could definitely do without. Glad that stage of life is behind you!

Mac and cheese is an all time fave of mine! I will definitely have to try this out. Oh, and have you ever seen Once Upon a Time (TV show)??? I am obsessed! To the point where I bought a subscription to Hulu Plus so I could finish the season. If you liked Snow White you might like that show as well!

Just made this recipe, and it was outstanding! I made a few adjustments. 1) added 3 cloves of garlic. 2) used mozzarella instead of cheddar. 3) used half milk & half almond milk. I think I could have used more than the 2 cups of pasta, as there was so much sauce. Either way, it was still delicious! Thanks!

julie, did you use salt in this recipe? i just made this… it was really good but i thought needed salt.

Yes, I added salt to the pasta water (as stated in the instructions) so that seasoned my pasta. You could always add more salt, to taste, within the sauce if you feel like you need more.
