I feel like having a REALLY good guacamole recipe in your arsenal is key. You will always need it because you will be invited to potlucks, game days, picnics, etc. and additionally, you will likely be at the hosting end and a really good guacamole recipe is always welcomed at the dips and appetizer table.
Most of you probably already have a recipe you use but I just realized that I personally haven’t shared our favorite guacamole recipe on the blog yet.
We love ours pretty “plain” (as far as ingredient list goes) but the key is the lime juice. The tanginess along with the creaminess of the avocado and bite of the red onion is perfection!
Whether or not you use it, make be sure you have delicious guacamole at your parties — always!
The key to GOOD guacamole is having the perfectly ripe avocados. I’m kind of a freak when it comes to picking out avocados to use for guacamole. I’m the crazy lady standing over the avocado crate and going through the pile and gently pressing on their skins with my thumb. If they give a little; I know they’re perfect. You don’t want them rock hard (you won’t be able to smash them!) and you don’t want them super soft — they’ll be brown!
Also, I should say that all the “hacks” out there that get avocados to ripen quickly don’t work. I tried the whole wrapping the avocado in foil and putting it in the oven at a low temperature. It didn’t work for me and it just turned my avocado brown on the inside but it was still hard as a rock to slice. Weird, right?
Omg, and I’m going to admit something that some of you probably will think it’s gross.
You know avocado toast? Well, we had leftover guacamole and it was about to go bad so I smeared it on toast and had guacamole toast for breakfast, hahaha
Don’t knock it ’til you try it!
But chips dipped in guacamole is fine too. It’s more normal and far more addicting ;)
Our Favorite Guacamole Recipe
Ingredients
- 2 avocados, pit removed and scooped out of its shell
- ¼ cup (40 g) red onion, finely chopped
- Juice of 1 lime
- Kosher salt, to taste
- Freshly ground black pepper, to taste
Instructions
- In a large bowl, add avocados, red onion, lime juice, salt, and pepper and mash together until desired consistency.
- Serve with chips!
Looks like the perfect guac!!

Looks delicious….I would have to add cilantro but I do remember you saying you’re not a cilantro fan! :) Oh…..my husband and I have guacamole toast frequently — so not gross at all!!

i do guac on toast all the time and i love it! lately i have been very unlucky with avocados and i have been just pissed about avocados in general. i think the right amount of lemon juice + good avocados make a huge difference.

Hi Julie, not sure if you’ve tried this before, but the only avocado-ripening trick that’s ever worked for me is 1-2 days before you want to use it, seal it in a bag with some bananas. Apparently the chemicals given off as the bananas ripen help to speed up the ripening of the avocado as well. It’s not immediate, but oh-so-helpful depending on what’s available at the supermarket.

Sounds good and simple! Actually I too tried the soften the avocado in the oven and it worked for me. Took much longer than indicated but I kept checking them and was happy with the result.
