The other night, I had a dream that a spider was crawling on my face and under my sleeping mask. Like, I literally felt its legs and body just crawling on top of my eyelids. If you know me at all, you’ll know I’m pretty terrified of any bug. I will literally scream at a bee zooming by me or an insect crawling near me. Seriously, not meant for the outdoors. I’ve never been camping before and I’m pretty sure if I were to go, I’d be glamping or loading up on bug spray.
Anyway, so the other night, I was dreaming but it felt so real so in the dream I was shaking my head vigorously and scratching at my eyelid to get the spider off my freaking face. Um yeah, thankfully it was a dream and I woke myself up because I was shaking my head so much that my sleep mask was flying off my face from one side to another. So scary! You know how in Divergent they have fear landscapes? Well, I guarantee you that one of my fear landscapes would be bugs and insects and they probably would be crawling all over me. Talk about panic attack.
This dish should be called “Julie’s way of holding onto summer” dish. I’m so going to miss grilling and the abundant amount of sweet fruit and vegetables. These peaches that I bought were the most fragrant things ever. I put one in my purse for work one day and when I got to work, my wallet smelled like a peach! I’ve never grilled a peach before and I figured this little flavor combination that I’ve got going on sounded just marvelous. Grilling peaches just brings out the sweetness even more and omg the caramelization on the outside. Soo good! And burrata? Pretty much one of my favorite cheeses ever. The balsamic drizzle just ties all the flavors together. I mean, really, can you say no to a summer dish like grilled peaches with burrata, mint and balsamic drizzle? I don’t think so :)
Now, it’s kind of hard to give a recipe or an exact formula to this cause it’s literally just grilled peaches, a whole thing of burrata, and a bit of balsamic glaze on top then sprigs of mint. I put a recipe below just in case but it’s vague due to the nature of this dish. I honestly don’t think you could mess this dish up :) your friends and family are going to L-O-V-E you if you make this for them as a goodbye to summer cookout. Labor Day, anyone?
Grilled Peaches with Burrata, Mint, and Balsamic Drizzle
Equipment
Ingredients
- 3 large ripe freestone peaches, cut in half and pitted
- Burrata cheese
- Balsamic vinegar or balsamic glaze
- Sprigs of mint
Instructions
- Turn your outdoor grill on high (you can also do this on an indoor grill if you don’t have access to an outdoor grill).
- Spray grill with a bit of cooking spray then place peach halves on the grill, flesh-side down.
- Grill peaches until grill marks appear to your desired degree (some like it darker, some like it lighter).
- Remove peaches and set aside to cool – just enough to touch but still warm.
- Once cooled, sliced peaches and arrange them neatly on a platter.
- Break burrata into pieces and dollop all over the tops of the peach. Drizzle balsamic on top and top with mint sprigs.
- Serve warm.

Julie, I have news for you. That is not a dream, that’s a nightmare! My skin was crawling just thinking about it! I am with you – I’m not a fan of bugs. This recipe on the other hand, I’m totally into it! Bring it on! And yes, let’s keep summer!

This is sooooo summer in a bowl! I have the craziest dreams too. I usually wake up and have to take a sec to remember it is not real. Oh! I hear we are all going to hang out when you are in the Chi next month! Yaaayyyy!
