Since I have a feeling most of you who will be having friends and family over on Memorial Day weekend will be using the outdoor grill to some extent, I thought I’d share this amazing pistachio mint pesto that I made.
It literally can go on everything and we slathered it over a giant piece of steak and it was so flavorful.
I love pistachios. They have such a robust and different flavor than all the other nuts. Their color is so vibrant too.
I never thought to make pistachio into pesto but why not? You use pine nuts with basil pesto so why not just swap out the basil and pine nuts for pistachio and mint? I’m telling you — flavor city.
Do yourself a favor and buy the already shelled pistachios. Your thumbs will thank you, especially the amount you’ll need for this recipe, haha

Super duper easy recipe for pesto and you can literally top it on whatever you desire. This is especially good on meats but omg, I can imagine it being tossed in pasta too or like a pizza or caprese or charcuterie spread.
The possibilities are endless! All you need is a food processor and a handful of ingredients!
Pistachio Mint Pesto
Servings are adjustable but please note that results, timing, and cookware may vary when adjusting servings.
- 1/2 cup shelled pistachios
- Handful of mint leaves
- Salt, to taste
- Olive oil
- Add pistachios, mint, and salt into the container of your food processor. Begin to process and as it is processing, drizzle olive oil in the chute until mixture comes together to a desired consistency.
