Swift and Simple: Shaved Steak Stir Fry

Shaved beef is so underrated when it comes to using it for recipes. Generally, it’s either thick cut steak or ground beef but hardly ever shaved beef unless it’s in a cheesesteak. Shaved beef is so versatile and just as good as ground beef. It cooks super fast because it’s shaved so thin and it’s what helps in a quick weeknight dinner.

This shaved steak stir fry combines shaved beef and vegetables together in a thick, salty and sweet stir fry sauce. It’s incredibly easy to make and you’ll be putting this on your dinner rotation weekly.

What Is Shaved Beef?

Shaved beef or shaved steak is thinly sliced beef of any cut (chuck, rib-eye, skirt, flank, etc.) and it refers to the technique of being cut thinly rather than the cut of beef.

Recipe Tips and Variations

  • While you can buy a cut of beef and try to thinly slice it yourself, it won’t be the same as what you buy in stores. When you buy shaved beef in stores, it’s literally paper thin and unless your knife is extremely sharp and you’re skilled in slicing, definitely opt for shaved beef that’s already cut for you.
  • I love when my shaved beef has crispy, browned edges. It gives it extra flavor and texture. To achieve this, you have to cook it in batches (otherwise it’ll just steam) and you have to leave it alone. I promise you, it’s worth it!
  • Adding in more vegetables is always a great and filling option! Matchstick carrots, snow peas/sugar peas, and asparagus are some suggestions.

Storage and Reheating Instructions

Allow leftovers to cool then store in an airtight container in the refrigerator for up to 4 days. To reheat, reheat in a microwave-safe bowl and heat until warmed through. Alternatively, you may reheat on the stovetop in a skillet until warmed through.

What to Serve With This Recipe

We like to serve shaved steak stir fry on a bed of white rice. The white rice gets coated in the stir fry sauce as well and the whole meal is well-balanced and so yummy!

Another option is vegetable fried rice or a vegetable side dish like this Chinese cabbage stir fry or my dad loves having soup with his main meals so this creamed corn and egg soup is a lovely pairing!

Equipment

Ingredients 

  • 1 pound (454 g) shaved steak/beef
  • 1 ½ cups (137 g) broccoli florets, sliced
  • 1 red bell pepper, sliced

For the sauce:

  • ½ cup (118 ml) low sodium soy sauce
  • 3 tablespoons dark brown sugar
  • 4 cloves garlic, minced
  • 1 teaspoons grated ginger
  • 1 tablespoon cornstarch

Instructions 

  • Whisk together all the ingredients for the sauce and set aside.

  • In a large wok or skillet over medium-high heat, add 1 tablespoon of vegetable oil. Once the oil is hot and glistening, add shaved steak to the pan. You may need to do this in batches so it doesn’t overcrowd the pan and steam the steak instead of browning it. Since shaved steak is very thin, you only really need to brown one side then remove from the pan and set aside. Repeat until all steak has been browned, but not cooked all the way through.

  • Reduce heat to medium then 1 teaspoon of oil and add broccoli and red bell pepper. Cook until tender. You may need to add 2 tablespoons of water to the skillet, cover, and allow to steam for 3 minutes to quicken the process.

  • Once vegetables are tender, add back in the browned steak. Turn heat to medium-high and make a well in the center of the mixture. Add the sauce, stir, and allow to thicken, about 30 seconds. Continue stirring and tossing ingredients in sauce until evenly coated. Remove from heat.

  • Serve with white rice. Sprinkle white sesame seeds and sliced green onions on top for garnish.

    Your shaved beef stir fry was wonderful. I added broccoli, carrots and cauliflower to the veggies? Amazing! Hubby hates broccoli and didn’t even taste it. I used thin sliced beef for stir fry. The beef just wasn’t thin enough. I’ll make sure next time.
