Vacations go by way too fast. You know those vacations that you plan and think about all the time and then when it’s finally here, you’re like, ‘omg yay I can’t believe it’s tomorrow!!’ and then you’re somehow already home and unpacking and re-living your vacation through photos? Yeah, that’s about my sad state right now. I went to Chicago this past Wednesday-Sunday with a few of my closest blogging friends and it was a whirlwind. We ate so much good food and had so much fun hanging out together. Why don’t we all live closer to the friends we love?
I have a theory that we’re purposely all far apart because it makes the time you spend together that much better and special. Of course, I’m sure if we all lived close to each other, we’d still make every moment fun and special but something about distance and making you appreciate the time together more. Kind of like that whole ‘distance makes the heart grow fonder’ thing.
When I was on my paleo challenge, I was CRAVING a big juicy medium steak with chimichurri sauce slathered all over the top. We don’t eat beef much but there are moments where we crave it and run to the store and get a big steak and grill it. I can’t really describe how it feels but satisfying a craving is so delicious and rewarding.
When the craving hit, I immediately made the chimichurri sauce {super easy, by the way} while Jason manned the grill. It’s super easy to make this entire dish and you can even make the chimichurri sauce days ahead of time and use it whenever you want to grill.
Grilled Flank Steak with Chimichurri
Equipment
Ingredients
- 2 pounds (907 g) flank steak
- Montreal steak seasoning
- 1 recipe for homemade chimichurri sauce
Instructions
- Heat up your grill on high.
- Season both sides of your steak with as much steak seasoning as desired.
- Place steak onto hot grill and let cook to the doneness that you desire (rare, medium-rare, medium, etc.)
- Let steak rest for 15 minutes before slicing into strips. Slather chimichurri sauce all over the top before serving.
One of my favorite sauces ever!!! Bring on the steak!

We are going to Florida in a couple of weeks and I’m already dreading the trip home (such a Debbie Downer, lol). So I know what you mean! But it looked like you had a blast in Chi-town! This steak needs to go on my holiday weekend menu, for sure.
