These pumpkin coffee cake muffins are the perfect fusion of a soft, spiced pumpkin muffin and a buttery, streusel-topped coffee cake. They come together in under an hour without a mixer, making them such an easy fall treat to whip up whenever a craving strikes. The crumb topping alone is reason enough to bake up a batch this weekend.

Pumpkin Muffins with Crumb Topping

I’ve made a lot of pumpkin muffin recipes at this point—pumpkin pecan, pumpkin cream cheese, pumpkin chocolate chunk—but this one scratches a different itch entirely. It’s not really a muffin recipe; it’s a coffee cake recipe wearing a muffin costume, and I mean that as the highest compliment.

These pumpkin crumb muffins have tons of pumpkin puree and are sweetened with brown sugar for a caramelly flavor and a dense, cakey crumb. The topping is thick, buttery, and just barely holds together in craggy pieces. And with pumpkin pie spice throughout, they’re never lacking in the fall flavor department.

Can I Add Crumbs to the Middle of the Muffins?

Yes, and it’s a great way to add some texture throughout. Fill each muffin liner half full, sprinkle a spoonful of crumb topping over the batter, then top with the remaining batter before adding the final layer of crumbs.

How to Make Pumpkin Coffee Cake Muffins

Whisk your dry ingredients (flour, baking powder, baking soda, salt, cinnamon, and pumpkin pie spice) together first. Then, in a separate bowl, whisk the wet ingredients (eggs, milk, melted butter, brown sugar, pumpkin puree) until smooth. Pour the wet into the dry and mix gently until there are no visible flour pockets, but don’t overmix, or your muffins will turn out dense. Divide the batter, filling your muffin liners ¾ full.

For the crumb topping, mix the flour, brown sugar, and spice together, then pour in the melted butter and work it in with a fork or your fingers until it forms clumps. You’re looking for pea-to-marble-sized crumbs, not a paste. Spoon a generous amount on top of each muffin and press down gently so the crumbs adhere to the batter during baking.

Ingredient Substitutions

I get a lot of questions about ingredient substitutions whenever I post a muffin recipe, so here are the swaps I’d recommend for these pumpkin crumb muffins:

  • Flour: You can substitute up to half of the AP flour for whole wheat flour to add a bit more fiber without making them too dense (similar to my whole wheat blend chocolate chip muffins). A 1:1 gluten-free all-purpose flour blend should work in both the muffins and the topping.
  • Fat: A neutral oil like vegetable or melted coconut oil works well in place of the butter in the batter. You can also swap up to half the butter in the batter for plain yogurt or unsweetened applesauce. For the crumb topping, stick with butter or a vegan butter substitute. Oil will make the streusel greasy and prone to melting.
  • Pumpkin: You can swap the pumpkin puree 1:1 for mashed sweet potato (like in my sweet potato bread). If you’re craving a banana version, check out my pumpkin banana muffins.
  • Eggs: Unfortunately, I haven’t tested this recipe egg-free. If you want to try it, I would recommend 2 flax eggs (2 tbsp ground flaxseed + 5 tbsp water, rested for 5 minutes). But expect a denser muffin.
  • Nuts: Fold in ½ cup of chopped pecans or walnuts, or sprinkle them into the crumb topping for extra crunch.

Why Is My Crumb Topping Sinking?

If your crumb topping is sinking into the batter instead of sitting on top, the most likely culprit is warm butter. If the melted butter is too warm when you mix the topping, it’ll make your crumbs loose and prone to sinking. Let the butter cool for a few minutes before combining it with the flour, sugar, and spice. The topping should feel slightly firm.

Alternative Pan Sizes and Formats

As with most muffins, this recipe is adaptable to different muffin tin sizes and other baking pans as well. Here are my recommendations:

  • Jumbo Muffins: Fill jumbo liners ¾ full, and bake for 8–10 minutes longer. Start checking with a toothpick at around 28 minutes. This recipe makes about 6 jumbo muffins.
  • Mini Muffins: Fill a mini muffin pan ¾ full and reduce the bake time to 12–14 minutes, checking starting at 12 minutes. This yields about 30 mini muffins.
  • 9×9 Pan: Pour the batter in, top with the crumb topping, and bake for 35–40 minutes, or until a toothpick comes out clean.
  • Loaf Cake: Pour the batter into a greased 9×5-inch loaf pan, top with the crumb topping, and bake for 55–60 minutes, tenting with foil at around 40 minutes if the top is browning too quickly.

Storage and Freezing Instructions

These pumpkin coffee cake muffins keep well in an airtight container at room temperature for up to 3 days or in the fridge for up to 1 week. The crumb topping will soften slightly in the fridge, so I recommend letting the muffins come to room temperature or warming them gently in the microwave before serving.

To freeze, cool the muffins completely, then freeze in a zip-top bag or airtight container for up to 3 months. Let thaw at room temperature overnight or microwave directly from frozen in 30-second bursts until warmed through.
