Chicken Enchilada Pasta is a great indulgent dinner that you will love.
If love enchiladas but don’t want to take the time to make them, then you’re going to love this dish. This dish is basically an enchilada within a pasta. Jason said, “this is so weird, it’s like eating an enchilada but it’s pasta.” Haha, it’s so true! It’s a very flavorful dish and it’s versatile. You can choose what you want to top it with and what you don’t. It’s always a different taste combination with what you choose to top your pasta with. I’m plain Jane and going for a more healthy dish so I didn’t add the dollop of sour cream on top nor the guac (and I hate green onions so that was omitted as well haha), but you are more than welcome to!
Mmm, indulge in this delicious and flavorful pasta! It’ll definitely confuse you for a second, at least it did me and Jason! We wanted to be cutting into an enchilada, but wait, we were using a fork and getting pasta on it? Haha, try it for yourself! It’s a keeper in my book :)
