Want to know what’s majorly fu*ked up? When you buy concert tickets with your “friends” back in November and them bailing on you. We bought three tickets to see Taylor Swift in concert in July. I got an email from the two girls a few weeks ago asking if they could have their tickets. Yeah, sure, I emailed it to them, but then I’m like, well they are probably trying to bail on me because they’ve always been flakey. I texted them to see if they were having second thoughts and if they were, they need to let me know ASAP so we can try to sell the three tickets. Long story short, they gave some BS excuse (‘work is busy on Monday’s’, ‘vacation plans are firming up’) and they said we should sell. Me, being the honest person that I am, put the tickets up on Craigslist and Facebook and sold them as a bundle. Three or none at all. I got an inquiry from Craiglist so I texted the girls and asked if it was okay to sell them to this guy at $$. They texted me back saying they are selling it to one of their sisters. So I’m like wait, like two of them or all three? Of course it was just two of them. I knew I’d get fu*ked over in this entire situation. You know what they said? “I could really use the money.” Oh, cause I can’t use $160? Who doesn’t need the money? I’m not a rich billionaire that can just throw that away. So, I’m stuck with one freaking concert ticket. Who is going to buy ONE concert ticket? Lesson learned: honest people always get screwed over. The flip-side? I’ll let karma do its thang. Don’t get me wrong, I get that since they paid me back for their tickets, they technically can do what they want with it, BUT, if they were really “friends,” I feel that they wouldn’t screw someone over like that. So clearly, they’re just selfish b!tches. I had been honest the whole time by selling all three or none at all to ensure none of us gets screwed over. I also asked them if tables were turned, how would they feel? Of course they’re all pansies and never responded.

To add insult to injury, they all (including one of the girls who wasn’t even going in the first place) decided to unfriend me on Facebook. Haha, they’re 25, 32, and 28 and they all act like 12.

What irks me these days is that no one can ever be blunt. If you’re blunt and tell it like it is, people can’t deal with that. They’re like ‘omg she was such a b!tch.’ We live in such a sugar-coated society. You basically get slapped across the face for being blunt and telling someone the truth about how they are. It’s ridiculous.

Okay, well, that felt good to get it off my chest. Like I said, it’s rare I post stuff like that on my blog but this was really eating away at me and I just had to vent. I’m like the Taylor Swift of blogging. You screw me over, you get written up, haha ;) now to make billions off that…

Moving on to another paleo meal that I made one evening that Jason and I devoured. Super easy and super filling. These ground turkey and spinach stuffed mushrooms are a dream to make because of how easy they are! These big portobello mushrooms are the best to have around because they are filling and give you that ‘meaty’ feel.

Ground Turkey and Spinach Stuffed Mushrooms

These are the perfect lunch or dinner option if you’re looking to use light and seasonal ingredients!
Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes
Servings: 2

Ingredients 

  • 2 teaspoons coconut oil
  • 6 large portobello mushroom caps, cleaned and gills removed (gently scrape it out with a spoon)
  • 1 small onion, diced
  • ½ pound (227 g) ground turkey
  • Handful of baby spinach leaves
  • 6-8 grape tomatoes, sliced (and roasted if you prefer)
  • Salt and pepper, to taste (Italian seasoning would be great too!)

Instructions 

  • In a large skillet over medium high heat, melt about 2 teaspoons of coconut oil. Place the mushrooms into the skillet and let cook until softened, about 5-7 minutes. Flip them halfway through. Set aside on a plate.
  • In the same skillet, add the onion and sauté until softened, about 3 minutes. Then add the ground turkey to the pan and break it up into small pieces with a spatula or wooden spoon. Cook until it’s all cooked through. Sprinkle salt and pepper and other seasonings, if using.
  • Remove from heat and add the baby spinach leaves. The residual heat should wilt the spinach easily.
  • To assemble: use a small spoon and scoop the turkey spinach filling into the caps of the mushrooms. Top with grape tomatoes. Serve warm!
