I’ve been mulling over chopping off my hair. It’s short as it is but I want the back to be shorter. Although, I don’t want it to be Kate Plus 8 style but more like Victoria Beckham style but I’m not quite sure I can pull it off. I’ve even tried Photoshopping my face onto some photos I’ve found [read: gigantic fail] but I guess I won’t really know until I do it. For those of you that know me/have seen me in person, do you think I can pull off something like this and this?
Jason is going out of town for four days and I’ve been debating whether or not to take off work Thursday and Friday to have some personal time. I have so much on my plate lately (more on that soon! Very exciting news to reveal!) that I just need to chill, but I’m worried that I’ll get stir crazy for four days just being cooped up in the house. Although I do have episodes of the new season of The Voice to watch (anyone watch it?! I love Gwen Stefani!!!) and my new favorite show is on DIY Network called Holmes Makes It Right. I remember he used to be on HGTV and I watched his show, Holmes on Homes, ALLLLL the time. He dropped off the planet for a while but now he’s back! I love watching all the mistakes he finds – it makes you really weary of contractors but it helps you figure out what to look for when hiring one!
This salted caramel apple tart looks elegant and seemingly hard to make but it’s really the simplest dessert ever! If you get pre-packaged puff pastry dough, you’ll this dessert on the table in no time. Everyone is going to think you spent so much time on this :) you’ll know the secret but don’t worry, I won’t tell.
Salted Caramel Apple Tarts

Ingredients
- 2 frozen puff pastry sheets, cut into thirds
- 3 large granny smith apples, sliced into 1/4-inch thick half moon shapes
- 3 tablespoons granulated sugar
- ½ teaspoon ground cinnamon
- Salted caramel sauce for drizzling
Instructions
- Preheat oven to 400 °F (204 °C) and line baking sheets with parchment paper or silicone baking sheets.
- Layer the apple slices on top of the pastry sheets. They can overlap each other, it’s ok.
- In a small bowl, stir together the granulated sugar and cinnamon.
- Gently sprinkle the cinnamon sugar mixture on top of the apples.
- Bake for 20-25 minutes, or until the puff pastries are slightly golden.
- Let rest for 10 minutes then generously drizzle salted caramel on top of the tarts.
- Serve immediately.
So good! You can’t go wrong with that caramel/apple combo and these sound totally winning.
PS I think you could rock the short hair for sure!
