Specialty Pizza: Buffalo Chicken Pizza

Buffalo chicken pizza’s popularity is on the rise. I’m seeing it as a staple on pizzeria menus and I can see why! Shredded chicken tossed in a tangy and spicy buffalo sauce and spread onto a pizza? Sounds like a great way to enjoy buffalo chicken (in addition to buffalo chicken dip or buffalo chicken mac and cheese!). If you’re fan of buffalo chicken wings, then you’ll love buffalo chicken pizza for all the same reasons.

The base of the pizza is a blue cheese dressing. I thought using a tomato base is kind of weird and might clash with the flavor profiles. It’s actually a really simple pizza to make but there is so much flavor especially from the kick of the buffalo chicken. Make this for your next game day or pizza party. There are more pizza flavor ideas below too if you’re looking to have multiple types!

How to Make Buffalo Chicken Pizza

  • Allow your pizza dough to come to room temperature. In the meantime, start by preheating your oven to 500 degrees Fahrenheit or preheating your pizza oven.
  • Lightly dust a nonstick 12-inch pizza pan with flour or cornmeal then work to stretch the pizza dough to fit the entire pan.
  • Toss shredded chicken in a large bowl with buffalo sauce.
  • To assemble your pizza, pour the blue cheese dressing on the dough then spread in an even, thin layer. Generously add the buffalo chicken throughout then sprinkle blue cheese crumbles on top.
  • Place pizza onto the middle rack in the oven or into your pizza oven and bake for 11 to 12 minutes (shorter for a pizza oven). It’s done when the dough is browned around the edges and the chicken has warmed through and the cheese is melted.

Substitutions and Tips

  • Buy a rotisserie chicken and shred it for your buffalo chicken!
  • If you aren’t a fan of blue cheese, you can substitute the blue cheese dressing for ranch dressing. You may omit the blue cheese crumbles or substitute with a milder cheese like gorgonzola, cambizola, or goat cheese.
  • There are various types of buffalo sauces and spice levels. Pick your favorite. If you wish for more spice, add a sprinkle of cayenne pepper to your shredded chicken.
  • If you have a pizza stone or steel, don’t forget to preheat it along with preheating your oven.
  • Store-bought dough is fine, but homemade is so easy to make!

Store-bought dough can differ in cooking time and baking temperature depending on the brand. Keep a close eye on your pizza in the oven.

Storage and Reheating Instructions

Allow pizza slices to cool then wrap individual slices in aluminum foil or place into a large container with a lid. Store in the refrigerator for up to 3 days. To reheat, reheat in the air fryer for best results! Heat until warmed through.

  • 1 large boneless, skinless chicken breast, cooked and shredded, or use a rotisserie chicken
  • cup (79 ml) buffalo sauce
  • ¼ cup (59 ml) blue cheese dressing
  • 2 tablespoons blue cheese crumbles
  • Sliced green onions, optional

Instructions 

  • Bring your dough to room temperature and preheat the oven to 500 °F (260 °C)

  • Lightly dust a nonstick, 12-inch pizza pan with flour. Work to stretch the dough to fit the entire pan.
  • In a medium bowl, toss the shredded chicken in the buffalo sauce.

  • Add the buffalo chicken on top, in a thin, even layer. Sprinkle the blue cheese crumbles on top of the chicken.

  • Place pizza on the middle rack in the oven and bake for 11 to 12 minutes or until dough is nice and brown around the edges and the chicken has warmed through and the cheese is melted.
  • Slice into wedges and serve with extra dressing and top with green onions (optional).
